My version of the Breakfast Cookie

This is my own version of the breakfast cookie adapted from Ellie Krieger. It was very easy (I'm all about easy). Hubby seems to always be rushing out the door in the morning and needs a grab-and-go kinda breakfast.

This came out "cake-like" and not hard like most breakfast cookies I've had in the past. Mostly I used what I had in my pantry.




- 3/4 c. whole wheat flour
- 1/2 c. AP flour
- 1/2 tsp. baking soda
- 1/2 tsp. nutmeg
- 1 tsp. cinammon

Combine together in a bowl and set aside.

- 2 tbsp. butter
- 1/4 c canola oil
- 1/4 c dark brown sugar
- 3 tbsp. organic grnulated sugar
Mix/cream together
- Add 1 egg
- 1 jar (about 1/4 c) of pureed fruit or veg (I just used applesauce since I didn't have any "baby food" available)
- 1 tsp. vanilla extract

Add the dry ingredients. 
Incorporate:
- 1/2 c rolled oats
- 1/2 c bran flakes (I used Honey Bunches of Oats)
- 1/3 c raisins
- 1/3 c walnuts (toasted)

Scoop/shape into cookies using about 1/2 of an ice scream scooper. Bake in 350 degree oven for 12 minutes. Makes 12 big cookies. Enjoy!
This is hubby's iced latte.
- 1shot of Starbuck's espresso mixed with fat free organic milk.
