Woke up this morning to this....
...it's 8 degrees outside with a blizzard warning in effect since last night. Tonight is supposed to be a low of (-)12..that's minus twelve people....yikes!
We're supposed to have Thanksgiving in Seattle---don't know if the weather will be safe enough to drive the pass, we'll just have to see.
Dinner last night was Shrimp and Grits (from Hungry Girl)
Dessert was some coconut macaroons topped with melted semi-sweet chocolate
Ingredients:
- 1 1/3 cups flaked coconut
- 1/3 cup organic sugar
- 2 Tbs. AP flour
- 1/8 tsp. salt
- 2 egg whites
- 1/2 tsp. vanilla extract
Preheat oven to 325F. Combine all the dry ingredients in a bowl. Stir in egg whites and vanilla extract. Mix well. Drop mixture with a small cookie scoop onto greased baking sheet. Bake for 18-20 minutes. Allow to cool.
For chocolate topping:
Melt 8 oz. of semi-sweet chocolate on double boiler, then drizzle on top of cooled macaroons.
And for breakfast this morning, made easy Frittatas. I didn't have ham, so I used breakfast sausage that I had in the freezer.
No plans for today except to get some chores done in the house----don't really want to be outside braving the lousy roads and weather.
