My hubby only had about half an hour of riding on his bike today...unfortunately, he was met with a downpour of unexpected rain. When we met up at home, Smalls was "ready" to "go" while we were both *pooped* from our workout!  Isn't he cute????

Saturday is Spinning Day

Good morning to you all!
Well, my Saturday STEP class has been cancelled (at least for the summer).   The gym is transitioning to new owners and hopefully, when the dusr settles, we'll resume a lot more Les Mills classes. So today was RPM for me...great work out with Dave!

Here's my post workout drink. Chocolate milk is a great source of protein especially after working out those muscles at the gym...but I love the Soy milk taste, too.



I have to show you what we had for dessert last night. I have to admit that I've had these 2 jars of peaches in my pantry for the last year. I finally found a recipe where I can use it.
It was Paula Deen's Dutch Oven Peach Cobbler recipe. I tweeked it a bit to my liking.




And I found this great new organic vanilla lowfat yougurt on sale....it's called Julie's. Funny 'cuz I was watching the Today show one day and they did a review of organic and low fat yogurt and Julie's came second to Haagen Daaz. MMMmmmmmm, yum, yum!!  



It was sooooo delish..especially when the cobbler was stiil warm and fresh from the oven.

  • 2 (16-ounce) cans sliced peaches in heavy or light syrup 
  • 1 pint fresh blueberries
  • 1/2 cup baking mix (I used Krusteaz)
  • 1/3 cup organic sugar
  • Ground cinnamon

Topping:

  • 2 1/4 cups baking mix (I used Krusteaz)
  • 1/4 cup sugar
  • 1/4 cup (1/2 stick) butter, melted
  • 1/2 cup fat free milk
  • Cinnamon sugar (1/4 cup sugar combined with 2 teaspoons ground cinnamon)

Directions

Preheat oven to 350 degrees F.
Spray a Dutch oven with vegetable oil cooking spray.
Drain 1 can of the peaches. Combine both cans of peaches, including the juice from the undrained can, the blueberries, if using, the baking mix, sugar, and a sprinkling of cinnamon. Place this mixture into the Dutch oven.
To make the topping: Combine the biscuit mix, sugar, butter, and milk. Drop bits of dough, using your fingers, on top of the peaches. Sprinkle with cinnamon sugar.
Place the Dutch oven into the preheated oven and bake for 50 minutes, until the top is golden brown and crusty.

CPR and HIT

Hi there!!! Happy Friday!

Well, my DD and I went to CPR class last night in preparation for my Personal Trainer Cert Course in October. I figured, I might as well get 'r done. Well, nothing much has changed except AEDs are widely available now and if you're a single person rescuer, giving mouth-to-mouth is optional. It only took us 45 minutes for the class ....whizzzed right through it.




Woke up this morning and I remembered I promised Kathy I would come and join her and hergroup for some HIT...I forgot that it was at 8:00 am. So I had to wake up early..needless to say...but hubby was up anyway so I dragged myself out of bed to get my caffeine fix and I'll at least have the energy to do this.


What's your beverage of choice when you go to the gym? Here's mine.

I get Zip Fizz, it's an energy powder you mix with water, from Costco..they can be a little pricey so I wait until they're available with a coupon. My fav flavors are Grape and Orange Soda.  I guess it's an acquired taste but I do love it especially when it gets soooo HOT i n the gym.

Dinner by myself tonight, hubby going to HS reunion, daughter going to dinner with her fture in-laws (*sighhhh*). Talk to you later...

Aaahhh-- starting anew

I've done 2 blog sites in the past but can't seem to continue...now I'm starting over an hopefully, will do better with this one. My previous ones were dedicated more to my "paper crafting" but I'd like this one to be more about my everyday struggles with trying to live a healthy life, which of course, will include my creations, whether in the kitchen or the craft room. I am still very much an amateur in the kitchen but am slowly becoming more and more a "foodie". And of course, to stay healthy, I love to exercise as well...otherwise I would not be able to sample all the "goodies" from the kitchen.
