Banana Pancakes with Walnuts

Good Tuesday to you! How's everyone doing this cold morning? It's 11 degrees right now!!!
It is freezing outside, it's insane!
I wish I was here...

...which reminded me of the first breakfast we had on the Kaua'i island...so I decided to recreate it this morning.

Pancake Mix
1 cups AP flour
2 cups whole wheat pastry flour
6 Tbsp. yellow cornmeal
6 Tbsp. organic sugar
1 Tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
(Store extra pancake mix)

1/4 tsp. ground cinnamon
1 cup low fat buttermilk
1/4 cup water
1 egg
1 Tbsp. canola oil
1 tsp. vanilla extract
1 large banana, halved, lengthwise and cut into thin slices

Combine 1 1/3 cups Pancake mix and the cinnamon in a large bowl. Combine the buttermilk water, egg, oil and vanilla extract in separate bowl.  Whisk into the pancake mix and stir until smooth. Fold in the banana.
Spray nonstick skillet with cooking spray and set over medium heat. Add the pancake batter in 1/4 cupfuls and cook in batches for about 2 minutes or until puffed and undersides are lightly browned. Turn over and cook for about 2 minutes longer. Serve with maple syrup and extra bananas.

It's as close as I'm going to get to the islands, at least for today.
