Hi friends....it's *hump* day! One more get up before the weekend...and one more day before DD comes home ☺.
We had a "snow storm" warning in effect last night but most of the snow melted with the rain that followed. So this morning, the city ended up with mostly *black ice*. I'm thankful I don't have to go anywhere today but I do have to teach Zumba tonight...I'm hoping it's not too bad of a drive this afternoon.
The weather has been so unpredictable lately from a wind storm to rain and snow. Our backyard looks like a disaster from all pine needles that's been blown all around. Hubby tried to clean and trim some of the bushes last weekend and found a nest that's been abandoned.
While hubby was cleaning the backyard, I baked an applesauce cake from leftover applesauce I've had in the fridge. It turned out really good and we've had it for breakfast the past few mornings. It was also very easy to make.
Ingredients:
1/2 cup of butter
1 cup organic sugar
1 cup applesauce
2 cups AP flour
1 tsp. baking soda
1 tsp cinnamon
1/4 tsp. ground cloves
1/2 cup raisins
1/2 cup chopped walnuts
2 Tbsp. Flax seed (optional)
Directions:
1. Cream butter and sugar. Add Applesauce; beat well. Stir in flour, baking soda and spice. Add nuts, raisins and flax seed (if using).
2. Pour the batter into a greased 8 inch square pan. Bake at 350F for 40 minutes or until done. Serve warm and sprinkle powdered sugar on top (optional).
I've been meaning to tell you about a stalker in the front of our house, too. I call him a stalker but really I think he's a homeless little tiger. Smalls always looks for him when he's out there. "Little tiger" usually hangs out on our neighbor's porch but this day, he was a "crouching tiger" in the empty lot next to our house.
[Maybe that's why the birdies left....hmmmm].
