National Running Day

HAPPY NATIONAL RUNNING DAY!

And even though the day is almost done....I didn't forget to pay homage to this day. I kept the streak going and I had plans to run 5 miles today. Then I got to 6 miles and realized it was also 6/6 (June 6th). And since I get freaked by *things like that*....  I did 7 miles instead.

Busy Wednesday for me with projects, cleaning and getting ready for a 4-day weekend.

It's been stormy here for the past few days and it's supposed to continue throughout the week. I guess technically, summer doesn't get here for at least another 2 weeks.

"Healthy" Chocolate Chip Cookies (adapted from Bev's Chocolate Chip Cookies)

Ingredients:
  • 3/4 cup rolled oats
  • 1 cup AP flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup butter, softened
  • 1/4 cup canola oil
  • 1/3 cup granulated sugar (I used Apriva -similar to Stevia)
  • 1/3 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Directions:

1. Preheat oven to 350F. Prepare baking sheets by coating with cooking spray.

2. Grind oats in a food processor (or blender). Transfer to a medium bowl and stir in the flour, baking soda and salt. Beat butter in a large bowl with mixer until fluffy. Add oil, sugars, egg and vanilla; beat until smooth and creamy. Add the dry ingredients, beat at low speed until just combined. Stir in the chocolate chips.

3. Measure heaping teaspoonfuls of the dough and drop onto prepared baling sheets at least 1 inch apart. Bake 13-15 minutes or when edges become firm and the top is golden brown. Cool for about 2 minutes on baking sheets, then transfer to wire racks to cool completely.


About 99 calories per cookie.
