Apple Streusel Coffee Cake (adapted from the Food Network)
Ingredients:
- 1 cup AP flour
- 1/2 cup whole wheat flour
- 2 1/4 tsp baking powder
- 1/2 cup Splenda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 egg
- 1/2 cup skim milk
- 1/4 cup vegetable shortening, melted
- 1 1/2 cups chopped apples (I used 3
Streusel topping:
- 1/2 cup organic sugar
- 1/4 cup AP flour
- 2 Tbsp unsalted butter
- 1/2 tsp cinnamon
- Accompaniment: Vanilla ice cream (optional)
Directions:
Sift flour, then measure and sift together with the other dry ingredients. Beat the egg, then add the milk and melted shortening. Pour the wet into the dry then add the raw apples and mix well. Pour into a well-greased 8-in square pan. Mix together the streusel ingredients and sprinkle on top of the batter. Bake at 400F about 25-30 minutes or until toothpick inserted comes out clean.
Enjoy with or without the ice cream!
