TGIF

Good Friday morning! How's your Friday so far? Mine started off early (once again)----got up at 5:00 am eventhough I wanted so bad to sleep in. Oh well, maybe tomorrow :(

So I got up... made my latte....used Almond milk this time (ran out of soy milk) and paired it with apple/cinammon oatmeal.

Then started to watch Project Runway from last night on my DVR...I love that show!....spoiler alert!!!! Casanova's out...he was funny!


For dinner last night, had shrimp quesadilla..simple and quick.



For dessert, made brownies from scratch!




...it came out perfect..oooeey and gooeey, just the way I like 'em.

Ingredients:

  • 2  tablespoons  water
  • 3/4  cup  granulated organic sugar
  • 1/3  cup  coconut oil
  • 1  1/2 cups semisweet chocolate chips
  • 2  large eggs
  • 1  teaspoon  vanilla extract
  • 3/4  cup  all-purpose whole wheat flour
  • 1/4  teaspoon  salt
  • 1/2  cup  chopped walnuts
  • Powdered sugar (optional)

Preparation

Combine first 3 ingredients in a 3 1/2-quart saucepan. Bring to a boil over medium heat, stirring constantly. Remove from heat, and stir in 1 cup chocolate chips until smooth. Let cool 5 minutes. Add eggs, 1 at a time, stirring just until blended. Stir in vanilla.
Combine flour and salt. Stir flour mixture into chocolate mixture in saucepan. Stir in remaining chocolate chips and walnuts. Spread into a lightly greased 9-inch square pan.
Bake at 325° for 25 to 28 minutes. Cool in pan on a wire rack. Dust with powdered sugar (optional). Cut into squares.

After RPM and 20 minute yoga, took a quick shower and headed to Sprout...had my haircut (just a trim), and color.
