My MacBook went *kaput*, so hubby had to get a new charger today----that cost $70 (yikes!), the battery costs even more (thank goodness it was still OK).
Launch was yesterday at the gym ---- more pix coming soon! There was a great turn-out and we had a blasty!!!
Hubby and I went to a GU (that's Gonzaga University) game last night. It was against Loyola Marymount. We don't go very often, I think the last time was about 2-3 years ago.
Before we left the house, I made Roast beef panini. I used multi-grain bread, roast beef, avocado slices, tomato slices, arugula and dijon mustard. Then brushed the outside of the bread with olive oil before sticking it in the panini maker.
On our way out, we saw a few visitors in our neighborhood.

Ingredients
- ½ cup (1 stick) softened unsalted butter softened
- ¾ cup Agave nectar
- 1 egg
- 1 tablespoon vanilla extract
- ¼ teaspoon almond extract
- 1 ½ cups whole wheat pastry flour
- ¼ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ½ teaspoon sea salt
- ½ teaspoon cinnamon
- 1 cup semi-sweetened chocolate chips
- 1 cup chopped walnuts
- ½ cup raisins
Preheat oven to 325 degrees. Line cookie sheets with parchment paper. Beat butter with an electric mixer until creamy. Add Agave nectar and beat until fluffy. Add the egg, vanilla and almond extracts and beat until combined.
In a separate bowl, combine whole wheat pastry flour, cocoa powder, baking soda, salt and cinnamon. Add the dry mixture to the butter mixture and combine well. Fold in the chocolate chips, walnuts and raisins.
Drop by heaping tablespoonful onto cookie sheets. Bake cookies for 12 minutes (Do not over bake). Let cool 5 minutes on cookie sheets, then remove to wire racks to cool completely.
They are soft, fudgey, dark and chocolatey filled with 3 of my faves---chocolate chips, crunchy walnuts, and chewy raisins!
I'm still exhausted from yesterday!

-practicing more STEP for 1 hour launch tomorrow
