So I've been looking at these wonderful tomatoes on my counter for a few days now. And what do you do with all these juicy fruit? It is technically a fruit, yes?
I just used what I had on hand....very simple. I mixed the chopped tomatoes with olive oil, basil, garlic, salt and pepper and placed in on a toasted baguette.
Stick 'em in the toaster oven (at 350F) for another 45 seconds...and voila! Easy lunch!
