Blondies with Bananas and Chocolate Chip

I have a confession....I've never made a *Blondie* before. [Maybe 'cuz I prefer brunettes -- or brownies myself -haha!]

So when I had a couple of bananas to get rid of...it was a perfect chance to use them in this recipe.

Blondies with Bananas and Chocolate Chips
Ingredients:
  • 1 cup unsalted butter
  • 2 cups dark brown sugar
  • 4 eggs
  • 1 1/2 cups AP flour
  • 1 tsp vanilla extract
  • pinch of salt
  • 2 overripe bananas - mashed
  • 1 cup semi-sweet chocolate chips
Directions:
Using a double boiler, whisk the butter and sugar together until the butter is melted and the sugar is dissolved.
Let it cool for a minute or two and then whisk in eggs, salt, vanilla, and finally, the flour. Do not over mix the batter. It should be pretty moist.

Then add the mashed bananas and chocolate chips (make sure it's cool enough before you add the chocolate chips so they don't melt)
Lightly grease a 9 x 13 baking dish (with butter) and pour in the blondie batter.
Bake at 350F for about 30-35 minutes - depending on how done you want your blondies.

These are perfect to take to a potluck or just to share with friends and family.
