A {not so lonely} Scone

Sometimes, I feel like having a pastry for moi but I don't want to end up having so much leftover and feel guilty about it. It's hard to re-adjust the scale of most recipes to fit one person. Then I came across this recipe for A Scone for One from Heather.

And I just had to try if for myself.

BLUEBERRY Scone for One


Ingredients:

1/3 cup flour
1/2 tsp baking powder
1/4 tsp salt
1 Tbsp sugar
1 Tbsp cold butter, cut into small cubes
2 1/2 Tbsp skim milk
2 Tbsp mix-in of choice (I used blueberries)

Directions:


Preheat oven to 450F.

In a food processor, combine flour, salt, baking powder and sugar. Add the butter and pulse into mixture until it resembles crumbs. Then add the mix-ins and milk and pulse until dough starts to pull away from sides. Pull out the dough and form into a circle patting it down to 1/2 in thickness. Place on parchment paper and bake for 8-10 minutes or until golden brown. Let cool slightly.


Just think of the many different varieties of scones you can have -- everyday!
